Two Easy
Recipes to Try
One easy Mexican food recipe is baked apples. Simply place apples in the oven and bake them for about 15 minutes to half an hour (depending on the temperature), and when you
are done you have got an incredibly authentic, easy to prepare dessert. The result should be piping hot and sweet all the way through. Different apples bake differently, so keep a close eye on them. Another easy to prepare Mexican dish is called Red Chicken. It takes about half an hour to make. Start simmering your chicken while you
are preparing the rest of the ingredients to save yourself time.
4 chicken breasts (or 8 chicken breast halves) 4 tomatoes, large 5-7 diced green onions 2 cups chicken base mixed with 2 cups of water and 1 tablespoon of thyme 3 tablespoons of olive oil 1/2 teaspoon oregano 1 teaspoon cumin 1 teaspoon of powdered garlic 1/2 teaspoon unsweetened cocoa powder 1 tablespoon red chile powder 3 jalapenos, diced
So, you
are going to heat one tablespoon of olive oil up in your pan and then start simmering the chicken in it, until said chicken is browned. Pour in the chicken base/water/thyme mixture and bring the concoction to a boil. Once it
is boiling, cut the tops of your tomatoes off and place them, flat-side-down, on some aluminum foil. Coat them evenly with the rest of your olive oil (use a baste brush) and place them in the broiler, which needs to be set on high. Keep an eye on them: they’re done when the outer skin is wrinkly, they
are ruined when they turn black and start emitting smog.
While your tomatoes are off doing their thing, add everything else into the microcosm of chicken you
have got simmering above. If the liquid is cooking away too quickly, feel free to add some water. Meanwhile, your tomatoes are nice and wrinkled. Take them out, peel off their skin, and then mash them up into the made dish. Now you know why it
is called red chicken. Wasn't that an easy Mexican food recipe?
