Fajitas:

First, you need your seasoning:

2 1/2 Tbsp. cornstarch
2 Tbsp. chili powder
1 Tbsp. salt
2 Tbsp. paprika
2-1/2 tsp. chicken base
1/4 cup of finely diced green onion
1 tsp. garlic powder
1/3 tsp cayenne pepper
1 tsp. crushed red pepper flakes (1/2 for a milder dish)
1/2 tsp. cumin
2 diced chili peppers.

Mix all of this together, and then forget you have it. Go pick out a meat for your dish, chicken is the most popular, by far, but you can also use steak, pork, and even shrimp or fish. If you don't use chicken, make sure to change the chicken base in your seasoning above to match! (Beef base for steak, cooking wine for fish or shrimp, and vinegar for pork.) You have enough seasoning here for about three pounds of whatever meat you decide to use.

Cut one green and one red pepper into strips, and an onion if you like one, and then put them into a frying pan with your meat. Add about half a cup of water, and then spread your seasoning into the pan so that the meat gets an even coating.

Following the same directions above, you can also make Fajita Quesadillas by additionally making a cheese sauce on the side. 1/3 cup of milk, 1 tsp of butter, and 1/2 lb of white Mexican cheese melted together in a small pot. Add more milk to thin the sauce, add more cheese to thicken it. Take the fajitas and put them into a large flour tee, so that you can fold it over. Drizzle your cheese sauce over the fajitas to taste, fold the flour tee, and then pour a bit of the cheese sauce on the outside. You can also heat the flour tee up in its own pan, with butter, if you prefer. Voila; you havee just added two Mexican-style dishes to your household Mexican food menu.
